What is the Perfect Check?
The Perfect Check is a concept that revolves around setting a specific target for the amount of money each customer should spend during their visit to your restaurant. This target is determined by taking your monthly revenue goals and dividing them by the average number of customers you serve each month. Once you have this target in mind, you can begin to design a meal that will meet this target, based on the menu items and categories you offer. The idea is to create a formula that your team can use to upsell and encourage customers to order more, with the goal of hitting the Perfect Check for each table.

The 4 Steps to Achieving the Perfect Check
Now that you understand the concept of the Perfect Check, let’s dive into the four steps you can take to achieve it in your restaurant.
Step 1: Determine your ideal per person check average
The first step in creating the Perfect Check is to determine your ideal per person check average. This involves figuring out exactly how much money you want every person that dines with you to spend. You can extrapolate this number from your monthly goals. Take your monthly target and divide it by the average number of customers you see in a given month. This will give you the average amount you need to hit to meet your goal.
Now that you have a target to hit, you can move on to the next step.
Step 2: List the individual menu items or categories a guest would need to choose to hit that target
The second step is to list the individual menu items or categories a guest would need to choose in order to hit the target you just established. What does a perfect meal look like for you? If that offering and your price point match up, you’re good to go. Make this formulaic.
It could be that every guest needs to order one drink, one main course, two sides, and a dessert to hit the target. If that’s a reasonable amount for a person to consume, then that’s your Perfect Check.
Step 3: Share that formula with your team
The third step is to share the formula you just created with your team. This needs to be a real training, not a pre-shift fly by. Walk them through the numbers, walk them through the formula, roleplay the sales pitch, and field and overcome potential objections from both them and the customers.
By doing this, you are giving your team a concrete goal to hit and the tools they need to hit it. You are also empowering them to sell more effectively.
Step 4: Tracking
The fourth step is the most vital: tracking. You need to set up the POS (point of sale) system to track the Perfect Check. You can do this by tracking it by employee, check average, or group type. Work with your POS company to ensure that you’re tracking this data. Tracking your progress is important because it allows you to see where you stand and adjust accordingly. It also allows you to reward your team for hitting their targets.
Finally, create incentives for your team built around the Perfect Check. These incentives can be based on things like the highest check average improvement, or you can offer the whole team a reward based on the total number of Perfect Checks achieved over a period of time.
The incentive can be as simple as a free meal at the end of every shift. By creating incentives for your team, you are encouraging them to work towards hitting their targets and rewarding them for doing so.
